Method

Ribs Preparation

    Prepare the Ribs

    Remove the membrane from the back of the ribs. Rub the pork rub seasoning evenly over the ribs. Let the ribs marinate for at least 1 hour, preferably overnight.

    Smoke the Ribs

    Preheat your smoker to 225°F (107°C). Place the ribs in the smoker and smoke for about 3-4 hours, or until tender and the meat is pulling away from the bones.

    Add Sauce

    In the last 30 minutes of smoking, brush the ribs with BBQ sauce to caramelize.

Cornbread Preparation

    Mix Dry Ingredients

    In a bowl, combine cornmeal, flour, sugar, baking powder, and salt.

    Mix Wet Ingredients

    In another bowl, whisk together milk, eggs, and melted butter.

    Combine and Bake

    Pour the wet ingredients into dry ingredients and stir until just combined. Pour into a greased baking pan and bake at 400°F (200°C) for 20-25 minutes or until golden brown.

Serve

    Plate the Dish

    Serve 6 smoked ribs on a plate with a side of coleslaw and a chunk of freshly baked cornbread.
