Method

Waffle Directions

  1. 1

    Prepare the Batter

In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.

  2. 2

    Combine Wet Ingredients

In another bowl, beat the eggs, then add the milk, melted butter, and vanilla extract. Mix well.

  3. 3

    Mix Dry and Wet Ingredients

Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix; small lumps are okay.

  4. 4

    Cook the Waffles

Preheat your waffle maker. Once heated, pour the appropriate amount of batter into the waffle maker and cook according to the manufacturer’s instructions until golden brown.

Eggs Directions

  1. 5

    Poach the Eggs

Bring a pot of water to a gentle simmer. Crack the eggs into individual bowls and gently slide them into the water. Poach for about 3-4 minutes or until the whites are set and the yolks remain runny.

  2. 6

    Season the Eggs

Remove the poached eggs with a slotted spoon and season with salt and pepper to taste.

Hollandaise Sauce Directions

  1. 7

    Prepare the Sauce

In a heatproof bowl, whisk together the egg yolks and lemon juice until pale and thick.

  2. 8

    Heat and Whisk

Place the bowl over a pot of simmering water (double boiler). Gradually whisk in the melted butter until the sauce is thickened and smooth.

  3. 9

    Season the Sauce

Season with salt and cayenne pepper to taste. Remove from heat and keep warm.
