In a large mixing bowl, combine the buttermilk, granulated sugar, vanilla extract, and eggs. Whisk together until the mixture is smooth and the sugar has dissolved.

In another bowl, sift together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; small lumps are okay.

Prepare the Butter
In a small saucepan, melt the unsalted butter over low heat. Allow it to cool slightly before folding it into the batter, ensuring an even distribution.

Cook the Sweet Buttermilk
Preheat a non-stick skillet or griddle over medium heat. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes or until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
