Preparing Homefries

    Cooking the Potatoes

    Peel the potatoes and cut them into small cubes. Rinse the cubed potatoes under cold water and then dry them with a clean towel.

    Frying the Potatoes

    In a large skillet, heat the olive oil over medium heat. Once hot, add the cubed potatoes, salt, and black pepper. Stir occasionally and cook for about 15-20 minutes or until they are crispy and golden brown.

Cooking Bacon and Vegetables

    Cooking the Bacon

    In a separate pan, cook the bacon over medium heat until crispy, about 5-7 minutes. Once cooked, remove from the skillet and place on paper towels to drain excess grease.

    Sautéing the Vegetables

    In the same skillet used for the bacon, add the chopped green bell pepper and cook for 2-3 minutes until slightly tender. Then, add the diced tomato and chopped green onion, cooking for an additional 2 minutes.

Assembly

    Combining Ingredients

    In a serving dish, layer the crispy homefries, followed by the sautéed vegetables and crumbled bacon on top.

    Topping with Sour Cream

    Finally, dollop the sour cream generously over the top of the layered ingredients. Serve immediately.
