Preparing the Egg Mixture

    Chop the Vegetables

    Finely chop the onion, bell pepper, and tomato and set them aside.

    Scramble the Eggs

    In a mixing bowl, whisk together the eggs, salt, and black pepper until well combined.

    Cook the Mixture

    In a skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper; sauté for 3-4 minutes until they are softened.

    Add Tomatoes and Beef

    Stir in the chopped tomato and shredded beef; cook for another 2-3 minutes until heated through.

    Combine with Eggs

    Pour the scrambled egg mixture into the skillet. Cook, stirring gently, until the eggs are just set, about 2-3 minutes.

Preparing the Sides

    Prepare Mexican Rice

    In a pot, cook the Mexican rice according to package instructions.

    Heat Refried Beans

    In a small saucepan, heat the refried beans over low heat, stirring occasionally until warmed through.

    If making fresh salsa fresca, dice tomatoes, onions, and cilantro; mix with lime juice and salt.

    Warm Tortillas

    Heat the corn or flour tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until warm.
