A grilled corn tortilla topped with two eggs over medium and our homemade ranchero sauce. Served with Mexican rice, refried beans and guacamole. Choice of corn or flour tortillas.

Method

To Prepare the Ranchero Sauce

    Sauté the Vegetables

    In a medium saucepan, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

    Add the Peppers

    Add the chopped red bell pepper and jalapeño pepper to the saucepan. Cook for another 3-4 minutes until the peppers are softened.

    Stir in Tomatoes and Spices

    Pour in the canned diced tomatoes, ground cumin, ground coriander, salt, and black pepper. Bring to a simmer and let cook for 10-15 minutes, stirring occasionally.

    Finish the Sauce

    Once the sauce has thickened, stir in the chopped cilantro and adjust seasoning if necessary. Remove from heat and set aside.

To Prepare the Eggs and Tortillas

    Cook the Eggs

    In a skillet, heat a little butter or oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny (about 4-5 minutes for medium). Remove from heat.

    Warm the Tortillas

    While the eggs are cooking, warm the tortillas in another skillet or directly over a flame until they are pliable and slightly charred, about 30 seconds per side.

To Serve

    Assemble the Dish

    On each warm tortilla, place a generous spoonful of the ranchero sauce, followed by two eggs. Top with additional ranchero sauce if desired.

    Add Sides

    Serve with a side of Mexican rice, refried beans, and a scoop of guacamole.
