For Chicken Tortilla Soup

    Cook the Chicken

    In a large pot, heat the olive oil over medium heat. Add the chicken breasts and cook until browned and cooked through, about 6-8 minutes per side. Remove the chicken and let it rest before shredding.

    Sauté Vegetables

    In the same pot, add the diced onion, garlic, bell pepper, and carrot. Sauté for about 5-7 minutes, or until the vegetables are softened.

    Combine Ingredients

    Add the canned diced tomatoes, chicken broth, corn, black beans, cumin, chili powder, salt, and pepper. Bring to a boil.

    Shred Chicken

    While the soup is boiling, shred the cooked chicken using two forks.

    Finish the Soup

    Reduce heat to low and add the shredded chicken back to the pot. Let it simmer for about 10-15 minutes.

    Ladle the soup into cups or bowls, top with tortilla strips, cilantro, and a lime wedge on the side.

    In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sauté for about 5 minutes until the onion is translucent.

    Add Tomatoes and Broth

    Stir in the canned whole tomatoes and vegetable broth. Bring to a simmer and cook for about 20 minutes.

    Blend the Soup

    Use an immersion blender to puree the soup until smooth. If using a regular blender, let the soup cool slightly before blending.

    Add Basil

    Stir in the chopped basil and season with salt and pepper to taste. If desired, add heavy cream for extra creaminess.
