Prepare the Ingredients
Wash and dice the Russet potatoes into small cubes. Chop the onion and bell pepper into small pieces. Slice the bacon into small strips and chop the green onions.

Cook the Potatoes
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes, season with salt and black pepper, and cook for about 10-15 minutes, stirring occasionally until they are golden brown and tender.

Stir in Corned Beef Hash
Add the corned beef hash to the skillet. Stir well to combine and cook for another 5-7 minutes until heated through and crispy.

Assemble the Hash Skillet
On a large serving plate, layer the potato and corned beef hash mixture, top with scrambled eggs, sprinkle with cheddar cheese, crispy bacon, and chopped green onions.
