Preparing the Potatoes

    Cook the Potatoes

    Peel and dice the potatoes into small cubes. In a large skillet, heat 2 tablespoons of oil over medium heat. Add the diced potatoes and cook until they are golden brown and tender, stirring occasionally, about 15-20 minutes.

    Add Ham and Vegetables

    Once the potatoes are cooked, add the diced ham, bell peppers, and onions to the skillet. Cook for an additional 5-7 minutes until the vegetables are soft and the ham is heated through.

Cooking the Eggs

    Fry the Eggs

    In a separate frying pan, heat a teaspoon of oil over medium heat. Crack the eggs into the pan and cook sunny side up until the whites are set but the yolks are still runny, approximately 3-4 minutes. Season with salt and pepper to taste.

Making the Gravy

    Prepare the Gravy

    In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute until bubbly. Gradually whisk in the milk and continue to whisk until the gravy thickens, about 5-7 minutes. Season with salt and black pepper.

Assembling the Dish

    Combine and Serve

    Once everything is cooked, layer the potato mixture onto plates. Top each serving with a sunny side up egg and sprinkle with shredded cheddar cheese. Drizzle the homemade country gravy over the top before serving.
