Method
Preparation for Short Stack

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, and salt until well combined.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are fine.

Cook Cinna-Cakes
Preheat a non-stick skillet or griddle over medium heat. Grease lightly with butter or oil. Pour 1/4 cup of batter onto the skillet for each cake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for an additional 1-2 minutes or until golden brown.

Serve warm with maple syrup, whipped cream, or your favorite toppings.
