Prepare the English Muffins
Slice the English muffins in half and toast them until golden brown. Set aside.

Poach the Eggs
Fill a medium saucepan with water and bring to a simmer. Add the white vinegar. Crack each egg into a small bowl and gently slide them into the simmering water. Cook for about 3-4 minutes or until the whites are set and the yolks remain runny. Remove with a slotted spoon and drain on paper towels.

Make the Hollandaise Sauce
In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens. Slowly drizzle in melted butter while whisking until the sauce is smooth. Season with salt and pepper to taste.

Prepare the Avocado
Slice the avocado in half, remove the pit, and scoop out the flesh. Cut into thin slices.

Assemble the Benedicts
On each toasted English muffin half, layer the toppings of your choice. For the classic benedict, add a slice of Canadian bacon and a poached egg on top, then drizzle with hollandaise sauce. For the vegetarian benedict, layer wilted spinach, avocado slices, and crumbled feta cheese, then top with a poached egg. Drizzle with any remaining hollandaise sauce if desired.
