Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour, tapping out the excess.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the semisweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.

  3. 3

    Mix Wet Ingredients

In a large mixing bowl, whisk together the large eggs, egg yolks, and granulated sugar until thick and pale. Stir in the melted chocolate mixture and vanilla extract until well combined.

  4. 4

    Combine Dry Ingredients

Sift the all-purpose flour and salt into the chocolate mixture. Gently fold the dry ingredients into the wet ingredients until just combined.

Baking

  1. 5

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

  2. 6

    Bake

Place the filled ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is still soft.

  3. 7

    Cool Briefly

Remove the ramekins from the oven and let them cool for 1-2 minutes. Gently run a knife around the edges to loosen the cakes.

  4. 8

    Invert and Serve

Carefully invert each ramekin onto a serving plate. Serve immediately, optionally dusted with powdered sugar and accompanied by a scoop of vanilla ice cream and fresh berries.
