Method
For the Chicken Fried Steak
- 1
Prepare the Beef Patties
Form the ground beef into two equal patties, each about 6 oz, and season both sides with salt, black pepper, and garlic powder.
- 2
Prepare the Breading
In a shallow dish, add 1 cup of flour. In another dish, whisk together the eggs and milk until well combined.
- 3
Bread the Patties
Dip each beef patty into the flour, coating well. Then dip in the egg mixture, allowing excess to drip off, and finally back into the flour for a second coating. Set aside.
- 4
Fry the Patties
In a large skillet, heat 1 cup of vegetable oil over medium-high heat. Once hot, fry the breaded patties for about 4-5 minutes per side or until golden brown and cooked through. Remove and drain on paper towels.
For the Country Gravy
- 5
Make the Gravy
In the same skillet used for frying the beef, leave about 2 tablespoons of the drippings. Add 4 tablespoons of flour to the drippings and whisk over medium heat for about 1-2 minutes.
- 6
Add Milk
Slowly whisk in 2 cups of milk, ensuring there are no lumps. Keep stirring until the gravy thickens, about 3-4 minutes. Season with salt and black pepper to taste.
For the Eggs
- 7
Cook the Eggs
In a small skillet, melt 1 tablespoon of butter over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny-side-up, over-easy, etc.), seasoning with salt and pepper to taste.
