Rinse Quinoa
Rinse 1 cup of quinoa under cold water in a fine-mesh sieve until the water runs clear. This helps to remove the bitterness from the quinoa.

Cook Quinoa
In a medium saucepan, combine the rinsed quinoa and 2 cups of vegetable broth. Bring to a boil over high heat, then reduce the heat to low and cover. Simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.

Chop Vegetables
While the quinoa is cooking, chop 1 medium red bell pepper, 1 medium carrot, and 1 medium zucchini into small, bite-sized pieces. Set aside.

Sauté Spinach
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 2 cups of spinach and sauté until wilted, about 2-3 minutes. Remove from the skillet and set aside.
Assemble the Bowl

Combine Ingredients
In the same skillet, add another tablespoon of olive oil. Add the chopped red bell pepper, carrot, and zucchini. Sauté over medium heat for about 5-7 minutes until the vegetables are tender.

Add the drained can of chickpeas to the skillet and stir to combine. Cook for another 3-4 minutes until heated through.

In a small bowl, whisk together 2 tablespoons of lemon juice, 1 teaspoon of garlic powder, 0.5 teaspoon of salt, and 0.5 teaspoon of black pepper. Drizzle this dressing over the quinoa and vegetable mixture and toss to coat evenly.
