    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced onion, green bell pepper, and celery. Sauté for about 5 minutes until they begin to soften.

    Add Garlic

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Cooking the Gumbo

    Brown the Sausage and Chicken

    Add the sliced Andouille sausage and diced chicken breast to the pot. Cook for about 5-7 minutes until the chicken is no longer pink.

    Add Liquids and Seasonings

    Pour in the chicken broth and add the canned diced tomatoes, bay leaves, Cajun seasoning, salt, and black pepper. Stir to combine.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 30 minutes, stirring occasionally.

    Add Shrimp

    In the last 5 minutes of cooking, add the shrimp to the pot. Cook until the shrimp are pink and opaque.

Serving

    Garnish and Serve

    Ladle the gumbo into bowls and garnish with sliced green onions and chopped parsley. Serve hot.
