1. Activate Yeast

In a small bowl, combine warm milk (about 110°F) and granulated sugar. Sprinkle yeast over the milk and let it sit for 5-10 minutes until frothy.

2. Mix Dry Ingredients

In a large mixing bowl, whisk together flour and salt.

3. Combine Wet Ingredients

In another bowl, whisk the eggs and add the frothy yeast mixture, melted butter, and vanilla extract. Mix until well combined.

4. Form Dough

Pour the wet ingredients into the dry ingredients and mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth.

5. First Rise

Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

6. Prepare Cream Cheese Filling

In a mixing bowl, beat the cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until fully combined.

7. Shape Pastries

Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface into a rectangle about 1/4-inch thick. Cut the dough into squares or triangles.

8. Add Filling

Place a spoonful of cream cheese filling in the center of each square/triangle and top with a spoonful of fruit preserves.

9. Fold and Seal

Fold the corners of the dough over the filling to create a pocket. Pinch the edges to seal.

10. Egg Wash and Topping

Brush the tops of the pastries with egg wash and sprinkle with sliced almonds.

11. Bake

Arrange the pastries on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.
