Preparation

Prepare the Potato Crust

Preheat the oven to 400°F (200°C). Grate the russet potatoes and rinse them in cold water to remove excess starch. Drain and pat dry. Mix with olive oil, salt, and pepper.

Prepare the Halibut

Season the halibut fillets with salt, pepper, and Colombo curry spice. Heat butter in a skillet over medium heat and sear the fillets for 3-4 minutes on each side until golden brown.

Prepare the Lobster

In the same skillet, add lobster meat and lemon juice, cooking until heated through.

Roast the Corn

Toss fresh corn kernels with olive oil and salt. Spread on a baking sheet and roast in the preheated oven for about 10-15 minutes or until slightly charred.

Cook the Grits

In a saucepan, bring water to a boil. Stir in grits and salt, reduce heat, and cook for 20-25 minutes, stirring frequently until thickened. Add butter and aged cheddar cheese, stirring until melted and smooth.

Assemble the Dish

On a serving plate, spread a layer of cheddar grits, top with the seared halibut, and spoon the lobster mixture over the top. Add roasted corn on the side and garnish with extra curry spice if desired.
