Method

Cooking the Steak

    Prepare the Steak

    Season the flatiron steak with salt and black pepper on both sides. Heat olive oil in a skillet over medium-high heat.

    Cook the Steak

    Add the steak to the skillet and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for 5 minutes before slicing.

Making Potato Rosti

    Prepare the Potatoes

    In a bowl, mix grated potatoes with salt and pepper. Heat 2 tablespoons of butter in a non-stick skillet over medium heat.

    Cook the Rosti

    Add the potato mixture to the skillet, pressing it down. Cook for 5-7 minutes until golden brown, then flip and cook the other side until golden. Remove and keep warm.

Preparing Seasonal Vegetable

    Cook the Asparagus

    In a separate skillet, heat olive oil over medium heat. Add asparagus, season with salt and pepper, and sauté for about 4-5 minutes until tender. Keep warm.

Making Sauce Bordelaise

    Prepare the Sauce

    In a saucepan, combine red wine and minced shallots. Reduce over medium heat until the liquid is reduced by half. Add beef stock and continue to reduce until thickened. Stir in butter and thyme, and season with salt and pepper.

Making Horseradish Butter

    Mix the Butter

    In a bowl, combine softened butter and prepared horseradish. Mix well and season with salt to taste.

Plating

    Serve the Dish

    Slice the steak and plate it alongside the potato rosti and sautéed asparagus. Drizzle sauce bordelaise over the steak and top with horseradish butter.
