Preparation of Fish

    Slice the Yellowtail

    Using a sharp knife, slice the fresh yellowtail into thin sashimi-style pieces. Arrange them on a serving plate.

Lemon Vinaigrette

    Make the Vinaigrette

    In a small bowl, whisk together the fresh lemon juice, extra virgin olive oil, salt, and black pepper until well combined. Drizzle over the sliced yellowtail.

Chive Oil

    Prepare Chive Oil

    Blend the fresh chives with the extra virgin olive oil until smooth. Strain through a fine mesh sieve to remove solids, then drizzle over the dish for flavor and garnish.

Fried Capers

    Fry the Capers

    In a small skillet, heat the extra virgin olive oil over medium heat. Add the capers and fry until crispy, about 2-3 minutes. Remove and drain on paper towels.

Cucumbers

    Thinly slice the cucumber and arrange it around the yellowtail on the plate for added freshness and crunch.

Fried Leeks
