Method
Preparing the Lamb Chops

Season the Lamb
In a small bowl, mix the olive oil, salt, black pepper, and garlic powder. Rub this mixture all over the lamb chops and let them marinate for at least 30 minutes.

Prepare the Gorgonzola Crust
Crumble the Gorgonzola cheese and set aside. Preheat the grill to medium-high heat.

Sautéing the Spinach

Sauté Garlic
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic cloves and sauté for 1-2 minutes until fragrant.

Add Spinach
Add the fresh spinach to the skillet and cook, stirring frequently, until wilted. Season with salt and black pepper to taste.
Making the Marsala Sauce

Sauté Shallot
In a saucepan, melt 1 tablespoon of butter over medium heat. Add the finely chopped shallot and sauté until translucent.

Add Liquids
Pour in the Marsala wine and beef broth, and bring to a simmer. Allow it to reduce for about 5 minutes.

Thicken the Sauce
In a small bowl, mix the cornstarch with water to create a slurry. Slowly stir this mixture into the sauce and continue cooking until thickened.
