Crispy Potatoes

    Prepare and Roast Potatoes

    Preheat the oven to 425°F (220°C). Wash and dice the potatoes into small cubes. In a bowl, toss the potatoes with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.

    Bake the Potatoes

    Spread the seasoned potatoes in a single layer on a baking sheet. Bake for 25-30 minutes, or until golden brown and crispy, flipping halfway through for even cooking.

Scrambled Eggs and Fillings

    Cook the Italian Sausage

    In a skillet over medium heat, add the Italian sausage. Cook for 5-7 minutes, breaking it up into small pieces with a spatula, until browned and cooked through.

    Add Tomatoes and Spinach

    Add the grape tomatoes to the skillet and cook for an additional 2-3 minutes until they begin to blister. Then add the fresh spinach and cook until wilted, about 1-2 minutes.

    Scramble the Eggs

    In a separate bowl, whisk the eggs with salt and black pepper. Pour the eggs into the skillet with the sausage, tomatoes, and spinach. Gently stir and cook over low heat until the eggs are just set, about 3-4 minutes.

    Add Grana Padano

    Once the eggs are almost done, sprinkle the grated Grana Padano cheese over the top and allow it to melt slightly before removing from the heat.

Ciabatta Toast

    Toast the Ciabatta

    In a small skillet, melt the butter over medium heat. Add the ciabatta slices and toast until golden brown on both sides, about 2-3 minutes each side.
