Pork Chops

Garlic Mashed Potatoes

Broccolini

Method

Pork Chops

  1. 1

    Marinate the Pork Chops

In a bowl, combine olive oil, minced garlic, chopped fresh rosemary, salt, black pepper, and lemon juice. Mix well to create a marinade.

  2. 2

    Prepare the Chops

Place the pork chops in the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours.

  3. 3

    Grill the Chops

Preheat the grill to medium-high heat. Remove the pork chops from the marinade and let excess marinade drip off. Grill for 6-7 minutes per side, or until the internal temperature reaches 145°F (63°C). Remove from the grill and let rest for 5 minutes before serving.

Garlic Mashed Potatoes

  1. 4

    Boil Potatoes

Peel and cut the russet potatoes into chunks. Place them in a large pot and cover with cold water. Add salt and bring to a boil. Cook until fork-tender, about 15-20 minutes.

  2. 5

    Prepare Garlic

While the potatoes are boiling, peel and mince the garlic cloves. In a small saucepan, melt butter over low heat and add the minced garlic. Cook for 2-3 minutes until fragrant but not browned.

  3. 6

    Mash the Potatoes

Drain the cooked potatoes and return them to the pot. Add the garlic butter mixture, heavy cream, salt, and black pepper. Mash until smooth and creamy. Adjust seasoning as needed.

Broccolini

  1. 7

    Prepare Broccolini

Rinse the Broccolini under cold water and trim the ends. In a large skillet, heat olive oil over medium heat.

  2. 8

    Sauté Broccolini

Add the Broccolini to the skillet and sauté for about 5-7 minutes, stirring occasionally, until tender but still bright green. Season with salt and black pepper to taste.
