Pasta Preparation

    Cook the Tortelloni

    In a large pot, bring salted water to a boil. Add the cheese tortelloni and cook according to package instructions until al dente. Once cooked, reserve 1 cup of pasta water and drain the rest. Set aside.

Sauce Preparation

    Sauté the Aromatics

    In a saucepan over medium heat, add a splash of olive oil. Once hot, add the finely chopped shallots and minced garlic. Sauté for 2-3 minutes until translucent.

    Prepare the Cream Sauce

    Add the heavy cream to the saucepan, stirring well. Gradually add the grated Parmesan cheese, stirring until melted and smooth.

    Add Herbs and Spices

    Stir in the chopped thyme, rosemary, basil, and Calabrian chili flakes. Let the sauce simmer on low heat for about 5 minutes to allow the flavors to meld. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.

    Crisp the Prosciutto

    In a separate pan, place the thinly sliced prosciutto over medium heat. Cook until crispy, about 3-4 minutes. Remove from heat and let it cool slightly, then crumble into pieces.

Assembly

    Combine and Serve

    In the pot with the cooked tortelloni, pour the Parmesan cream sauce and gently toss to combine. Serve immediately, topped with crispy prosciutto.
