Method
Cooking Pasta
- 1
Boil the Pasta
In a large pot of salted boiling water, add the radiatori pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
- 2
Drain the Pasta
Once cooked, drain the pasta, reserving about 1/2 cup of the pasta water for later use.
Making the Sauce
- 3
Sauté Garlic
In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
- 4
Add Tomatoes and Chili
Pour in the crushed tomatoes and add the Calabrian chili paste. Stir well to combine and let the sauce simmer for about 10 minutes, allowing the flavors to meld.
- 5
Season the Sauce
Taste the sauce and add salt to your preference. If the sauce is too thick, add some reserved pasta water to achieve your desired consistency.
- 6
Finish the Sauce
Stir in the chopped fresh basil and grated Parmesan cheese until well combined.
Combining and Serving
- 7
Combine Pasta and Sauce
Add the drained radiatori pasta to the skillet with the sauce. Toss to coat the pasta evenly in the sauce.
- 8
Plate and Top with Burrata
Divide the pasta among serving plates. Tear the burrata cheese into pieces and place on top of each serving. Garnish with fresh basil leaves and cracked black pepper.
- 9
Serve
Serve immediately and enjoy your Spicy Radiatori & Burrata!
