Tomato Compote Preparation

Prepare the tomatoes
Wash the fresh tomatoes thoroughly. Remove the stems and cut into quarters.

Simmer
Reduce heat to low and let the tomato mixture simmer for about 25-30 minutes, stirring occasionally until it thickens.

Add basil
Once the compote has thickened, stir in the chopped basil leaves and cook for an additional 5 minutes.
Pasta Cooking

Boil water
In a large pot, bring water to a boil. Add the tablespoon of salt.

Cook spaghetti
Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

Drain pasta
Once cooked, drain the spaghetti in a colander, reserving a little pasta water.
Assembly

Combine spaghetti and sauce
In the pot or a large serving bowl, combine the drained spaghetti with the tomato compote. Toss together, adding reserved pasta water if necessary to reach the desired consistency.

Serve
Plate the spaghetti Pomodoro and top with grated Parmesan cheese and fresh basil leaves. Serve immediately.
