Method
Preparing the Potatoes

Boil the Potatoes
In a large pot, bring salted water to a boil. Add the baby potatoes and cook for about 15-20 minutes until fork-tender. Drain and let them cool for a few minutes.

Smash the Potatoes
On a baking sheet lined with parchment paper, place the boiled potatoes. Use the bottom of a glass or a potato masher to gently smash each potato until they are flattened but still in one piece.

Charred Tomatoes

Prepare the Tomatoes
In a skillet over medium-high heat, add the cherry tomatoes and whole garlic cloves. Drizzle with balsamic vinegar.

Char the Tomatoes
Cook for about 5-7 minutes until the tomatoes are blistered and the garlic is fragrant. Remove from heat and set aside.
Making the Lemon Aioli

Combine Ingredients
In a small bowl, mix together mayonnaise, lemon juice, garlic powder, and salt to taste.

Whisk Together
Whisk until smooth and creamy. Adjust seasoning if necessary.
Plating the Dish

Assemble the Dish
On a serving platter, arrange the crispy smashed potatoes, top with charred tomatoes and garlic, and drizzle with lemon aioli.

Garnish with fresh herbs if desired and serve immediately.
