Prepare the Cheese Mixture
- 1
Whip the Feta
In a food processor, combine the feta cheese, mozzarella cheese, provolone cheese, and a drizzle of olive oil. Blend until smooth and creamy. If the mixture is too thick, add a little more olive oil until desired consistency is reached.
- 2
Grate Grana Padano
Grate the Grana Padano cheese using a microplane or fine grater and set aside for garnish.
Cook the Vegetables

Caramelize the Onions
Thinly slice the onion. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and a pinch of salt, and cook, stirring frequently, for about 15-20 minutes or until the onions are golden brown and caramelized.
