Whipping the Ricotta

In a mixing bowl, combine the ricotta cheese, olive oil, salt, and black pepper.

Using an electric mixer or a whisk, whip the mixture until smooth and creamy. This should take about 2-3 minutes.

Taste and adjust seasoning if necessary. Set aside.
Assembling the Mortazza

On a serving platter or large board, spread the whipped ricotta evenly.

Layer the mortadella slices over the ricotta, creating an attractive presentation.

Sprinkle the shelled pistachios over the mortadella.

Add a generous handful of arugula on top.

Shave Grana Padano cheese over the assembly using a vegetable peeler.
