Prepare the Grains
In a medium pot, bring water to a boil. Add the orzo and farro. Cook according to package instructions, usually about 10-15 minutes for the orzo and 25-30 minutes for farro. Drain and set aside.

Cook the Chicken
Season the chicken breasts with salt and black pepper. Heat olive oil in a grill pan over medium-high heat. Grill the chicken for about 6-7 minutes on each side or until cooked through. Remove from heat and let it rest for a few minutes before slicing.

Sauté the Mushrooms and Spinach
In the same grill pan, add the sliced mushrooms and cook for about 3-4 minutes until they start to brown. Add the fresh spinach and cook until wilted, about 2 more minutes. Season with salt and pepper to taste.

Combine Ingredients
In a large bowl, mix the cooked orzo and farro with the sautéed mushrooms and spinach. Drizzle with pesto vinaigrette and toss to combine.

Plate the Dish
Place the grain and vegetable mixture on a serving plate. Top with sliced grilled chicken, diced tomato, and fresh mozzarella. Drizzle with balsamic reduction before serving.
