Making the Dough

    Activate the Yeast

    In a small bowl, combine warm water, sugar, and yeast. Let sit for about 5-10 minutes until frothy.

    Mix Ingredients

    In a large bowl, mix the flour and salt. Create a well in the center and add the yeast mixture and olive oil.

    Knead the Dough

    Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.

    Let It Rise

    Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Making the Pizza Sauce

    Prepare the Sauce

    In a saucepan, heat olive oil over medium heat and sauté minced garlic until fragrant, about 30 seconds.

    Add Tomatoes

    Add the canned tomatoes (crushing them with your hands as you add) and salt. Simmer for about 20 minutes, stirring occasionally.

    Finish the Sauce

    Stir in the chopped fresh basil and remove from heat. Let cool slightly.

Assembling the Pizza

    Preheat Oven

    Preheat your oven to the highest setting (usually around 475°F or 245°C) and place a pizza stone or baking sheet inside to heat.

    Shape the Pizza Dough

    Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out into a round shape, about 12 inches in diameter.

    Add Sauce and Toppings

    Transfer the dough to a pizza peel or parchment paper. Spread a layer of pizza sauce, then add slices of fresh mozzarella, provolone, and vine-ripened tomatoes.

    Drizzle with olive oil and sprinkle grated Grana Padano on top.

    Bake the Pizza

    Carefully transfer the pizza onto the hot pizza stone or baking sheet. Bake for about 10-12 minutes or until the crust is golden and the cheese is bubbly.
