Preparing the Salmon

    Marinate Salmon

    In a small bowl, mix together olive oil, lemon juice, salt, and black pepper. Brush this mixture on both sides of the salmon fillets and let them marinate for at least 15 minutes.

    Grill the Salmon

    Preheat the grill to medium-high heat. Place the marinated salmon fillets on the grill, skin side down. Grill for about 5-7 minutes per side, or until the salmon is cooked through and flakes easily with a fork. Remove from the grill and let it rest.

Preparing the Salad

    Prepare the Greens

    In a large salad bowl, add the field greens as a base.

    Add Vegetables

    Halve the cherry tomatoes and add them to the bowl. Grill the asparagus until tender, about 5-7 minutes, then chop into bite-sized pieces and add to the salad.

    Add Feta and Potatoes

    Crumble the feta cheese over the salad and top with crispy shoestring potatoes for crunch.

Making the Dressing

    Prepare Balsamic Dressing

    In a small bowl, whisk together balsamic vinegar, olive oil, honey, salt, and black pepper until well combined.

Assembling the Salad

    Combine and Serve

    Slice the grilled salmon and place it on top of the salad. Drizzle the balsamic dressing over the salad just before serving. Toss gently to combine and enjoy!
