Grilled Chicken

    Prepare the Chicken

    Preheat the grill to medium-high heat. Pound the chicken breasts to an even thickness for even cooking. Season both sides of the chicken with salt, black pepper, and garlic powder.

    Grill the Chicken

    Brush the chicken with olive oil and place on the grill. Grill for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest.

Marsala Sauce

    Sauté Shallots and Mushrooms

    In a skillet over medium heat, melt the butter. Add the minced shallots and cook until translucent, about 2 minutes. Then add the sliced mushrooms and cook until they have released their moisture and are browned, about 5-7 minutes.

    Add Wine and Broth

    Pour in the Marsala wine and chicken broth. Bring to a simmer and let it reduce for about 10 minutes until slightly thickened. Stir in chopped parsley before serving.

Grilled Asparagus

    Prepare the Asparagus

    Trim the ends of the asparagus. In a bowl, toss the asparagus with olive oil, salt, and black pepper.

    Grill the Asparagus

    Place the asparagus on the grill alongside the chicken. Grill for about 5-6 minutes, turning occasionally, until tender and lightly charred.

Garlic Mashed Potatoes

    Boil the Potatoes

    Peel and cut the potatoes into quarters. Add them to a large pot of salted water, along with peeled garlic cloves. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and garlic, then return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy. Adjust seasoning to taste.
