Method
Preparing the Asparagus

Trim the Asparagus
Carefully snap or cut off the woody ends of the asparagus spears, about 2 inches from the bottom.

Season the Asparagus
In a large bowl, toss the asparagus spears with olive oil, salt, and black pepper until they are well coated.
Making the Lemon Vinaigrette

Combine Ingredients
In a small bowl, whisk together the fresh lemon juice, Dijon mustard, honey, olive oil, salt, and black pepper until well combined.

Taste and Adjust
Taste the vinaigrette and adjust the seasoning with more salt or pepper if needed.
Preparing the Pangrattato

Toast the Breadcrumbs
Stir the mixture frequently for about 5-7 minutes until the breadcrumbs are golden brown and crispy.

Remove from heat and stir in the grated Grana Padano cheese and salt. Mix well and set aside.
