Pangrattato

Method

Preparing the Asparagus

  1. 1

    Trim the Asparagus

Carefully snap or cut off the woody ends of the asparagus spears, about 2 inches from the bottom.

  2. 2

    Season the Asparagus

In a large bowl, toss the asparagus spears with olive oil, salt, and black pepper until they are well coated.

Making the Lemon Vinaigrette

  1. 3

    Combine Ingredients

In a small bowl, whisk together the fresh lemon juice, Dijon mustard, honey, olive oil, salt, and black pepper until well combined.

  2. 4

    Taste and Adjust

Taste the vinaigrette and adjust the seasoning with more salt or pepper if needed.

Preparing the Pangrattato

  1. 5

    Cook the Breadcrumbs

In a skillet over medium heat, add olive oil and minced garlic. Sauté for 1-2 minutes until fragrant, then add the breadcrumbs.

  2. 6

    Toast the Breadcrumbs

Stir the mixture frequently for about 5-7 minutes until the breadcrumbs are golden brown and crispy.

  3. 7

    Add Cheese and Season

Remove from heat and stir in the grated Grana Padano cheese and salt. Mix well and set aside.

Grilling the Asparagus

  1. 8

    Preheat the Grill

Preheat your grill to medium-high heat.

  2. 9

    Grill Asparagus

Place the asparagus directly on the grill grates. Grill for about 5-7 minutes, turning occasionally, until tender and lightly charred.

Serving

  1. 10

    Plate the Asparagus

Transfer the grilled asparagus to a serving platter.

  2. 11

    Drizzle with Vinaigrette

Drizzle the lemon vinaigrette over the asparagus.

  3. 12

    Top with Pangrattato

Sprinkle the toasted pangrattato on top of the asparagus for added crunch and flavor.

  4. 13

    Serve Immediately

Enjoy the grilled asparagus warm, as a side dish or appetizer.
