Creamy Parmesan Sauce

Prepare Gnocchi

    Cook the Potatoes

    Place the Russet potatoes in a large pot and cover them with cold water. Bring to a boil and cook until tender, about 30-40 minutes. Drain and let cool slightly.

    Make the Dough

    Once the potatoes are cool enough to handle, peel them and pass them through a potato ricer or mash them until smooth. Measure out 2 cups of the potato and place it in a large mixing bowl. Add 1 cup of flour, the egg, and 0.5 tsp of salt. Mix until a dough forms.

    Shape the Gnocchi

    On a floured surface, divide the dough into smaller portions. Roll each portion into a long rope about 1/2 inch thick. Cut the rope into 1-inch pieces. Optionally, use a fork to create ridges on each piece for better sauce adherence.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Add the gnocchi in batches and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Prepare Creamy Parmesan Sauce

    Melt the Butter

    In a large skillet over medium heat, melt 4 tablespoons of unsalted butter.

    Add Garlic and Cream

    Add the minced garlic to the skillet and sauté for about 1 minute until fragrant. Then, pour in 1 cup of heavy cream and stir to combine.

    Add Cheese and Seasonings

    Reduce the heat to low and gradually add 1 cup of grated Parmesan cheese, stirring until melted and smooth. Season with 0.5 tsp salt, 0.5 tsp black pepper, and 0.25 tsp nutmeg.

    Combine Gnocchi with Sauce

    Add the cooked gnocchi to the sauce and gently toss to coat. Cook for an additional 2-3 minutes on low heat until everything is warmed through.

    Garnish and Serve

    Remove from heat, garnish with chopped fresh parsley, and serve immediately.
