    Season the Steak

    Pat the filet mignon dry with paper towels. Season both sides generously with salt and black pepper.

    Prepare Garlic and Thyme

    Peel the garlic cloves and smash them slightly with the side of a knife. Set aside. Rinse the fresh thyme sprigs and set aside.

Cooking

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until shimmering but not smoking.

    Sear the Steak

    Add the seasoned filet mignon to the skillet. Sear for about 3-4 minutes on one side until a brown crust forms.

    Flip and Add Aromatics

    Flip the steak using tongs. Add the smashed garlic cloves and thyme sprigs to the pan, along with the butter. Cook for another 3-4 minutes for medium-rare, basting the steak with the melted butter and cooking juices.

    Check for Doneness

    Use a meat thermometer to check the internal temperature. For medium-rare, it should be about 130°F (54°C).

    Rest the Steak

    Remove the filet mignon from the skillet and let it rest on a cutting board for 5 minutes before slicing. This allows the juices to redistribute.
