Preparation of Marinara Sauce

Add Tomatoes and Seasonings
Stir in canned crushed tomatoes, dried oregano, salt, and sugar. Bring to a simmer and cook for 20 minutes, stirring occasionally. Add fresh basil before serving.
Prepare Chicken

Prep Chicken
Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper on both sides.

Dredge Chicken
Set up a dredging station: Place flour in one shallow dish, beaten eggs in another, and a mixture of Romano cheese and breadcrumbs in a third. Dredge each chicken breast in flour, then dip in eggs, and finally coat with the breadcrumb mixture.

Cook Chicken
In a large skillet, heat olive oil over medium heat. Cook the breaded chicken breasts for about 4-5 minutes on each side until golden brown. Place the cooked chicken on a baking sheet.

Add Mozzarella
Top each chicken breast with sliced fresh mozzarella. Bake in the preheated oven for 15-20 minutes until the cheese is melted and bubbly.

Boil Pasta
In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and return to the pot.

Add Basil and Parmesan
Stir in chopped fresh basil and grated Parmesan cheese into the cooked pasta. Toss to combine.
Serve

Plate the Dish
On each plate, serve a portion of herb pasta topped with a chicken breast. Spoon marinara sauce over the chicken and garnish with fresh basil leaves.
