Chicken and Sauce

    Prepare the Chicken

    Season the chicken breasts with salt and black pepper on both sides.

    Cook the Chicken

    In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and grill for 5-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Transfer the cooked chicken to a plate and keep warm.

    Make the Sauce

    In the same skillet, melt the butter and add the sliced mushrooms. Sauté for about 5 minutes until the mushrooms are browned and tender. Pour in the Marsala wine and chicken broth, scraping up any browned bits from the bottom of the skillet. Allow the sauce to simmer for about 10 minutes until it reduces slightly.

    Combine Chicken and Sauce

    Return the chicken to the skillet and cook in the sauce for an additional 2-3 minutes, making sure to coat the chicken well. Sprinkle with fresh parsley before serving.

Grilled Asparagus

    Prepare the Asparagus

    Trim the woody ends off the asparagus spears and place them in a bowl.

    Season and Grill

    Drizzle with olive oil, salt, and black pepper. Toss to coat evenly. Grill on medium heat for about 5-7 minutes, turning occasionally until tender and slightly charred.

Garlic Mashed Potatoes

    Cook the Potatoes

    In a large pot, add the cubed potatoes and cover with water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain the potatoes and return them to the pot.

    Add Garlic and Butter

    Add the minced garlic, butter, salt, and black pepper to the potatoes. Mash until smooth.

    Finish the Mashed Potatoes

    Gradually add the milk while continuing to mash until you reach the desired creaminess.
