Pasta Preparation

    Cook the Fettuccine

    In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

Chicken Preparation

    Grill the Chicken

    Preheat your grill or grill pan over medium-high heat. Rub the chicken breasts with olive oil, garlic powder, salt, and black pepper. Grill for about 6-7 minutes on each side, or until cooked through and no longer pink in the center. Remove from grill and let rest before slicing.

Sauce Preparation

    Make the Alfredo Sauce

    In a large saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and let it simmer for 2-3 minutes, stirring occasionally. Gradually whisk in the grated Parmesan cheese until melted and smooth. Add a pinch of nutmeg and season with additional salt and pepper to taste.

Combine Ingredients

    Combine Chicken, Spinach, and Fettuccine

    Add the fresh spinach to the sauce and stir until wilted. Then, add the drained fettuccine and sliced grilled chicken to the sauce, tossing everything together until well coated.

    Serve the Chicken & Spinach Fettuccine hot, garnished with chopped parsley and extra Parmesan cheese if desired.
