Preparing the Filet Mignon

Season the Filet
Pat the filet mignon dry with paper towels. Rub both sides with olive oil, then sprinkle with salt, black pepper, and chopped fresh rosemary. Optionally, crush the garlic cloves and rub them onto the filet.

Rest the Filet
Once cooked, remove the filet from the skillet and let it rest for at least 5 minutes before slicing. This allows the juices to redistribute.
Preparing the Broccolini

Blanch the Broccolini
Bring a pot of salted water to a boil. Add the broccolini and blanch for 2-3 minutes until bright green. Remove and immediately transfer to ice water to stop cooking.

Sauté the Broccolini
In a skillet, heat olive oil over medium heat. Add the blanched broccolini, salt, and lemon zest. Sauté for 3-4 minutes until tender.
Roasting the Fingerling Potatoes

Prepare the Potatoes
Preheat the oven to 425°F (220°C). Wash and dry the fingerling potatoes, then slice them in half lengthwise.
