Method

Prepare Charred Tomato Sauce

    Char the tomatoes

    Preheat a grill or grill pan over medium-high heat. Brush the halved tomatoes with olive oil and place them cut-side down on the grill. Cook for 4-5 minutes until charred.

    Make the sauce

    Remove the charred tomatoes from the grill and allow them to cool slightly. In a blender, combine the charred tomatoes, minced garlic, balsamic vinegar, salt, and black pepper. Blend until smooth and set aside.

Cook Pancetta

    Crisp the pancetta

    In a skillet over medium heat, add the pancetta slices and cook for about 3-4 minutes on each side until crispy. Remove from skillet and drain on paper towels.

Cook Burger Patty

    Form the patties

    In a bowl, combine the ground beef with salt and black pepper. Form into 2 equal patties.

    Cook the patties

    In the same skillet used for the pancetta, cook the burger patties over medium-high heat for about 4-5 minutes on each side for medium doneness.

Fry Eggs

    Cook sunny-side-up eggs

    In the same skillet, crack the eggs carefully and cook on low heat for about 3-4 minutes until the whites are set but the yolks are still runny.

Assemble the Burger

    Build the burger

    On the bottom half of the brioche bun, layer the cooked burger patty, followed by a slice of tomato, crispy pancetta, and a generous spoonful of charred tomato sauce. Top it with the sunny-side-up egg and cover with the other half of the bun.
