Parmesan Crusted Sautéed Sand Dabs Recipe

Method

Prepare the Risotto

    Cook the Onion

    In a saucepan, melt 2 tablespoons of butter over medium heat. Add the chopped onion and sauté until soft and translucent.

    Add the Rice

    Add the Arborio rice to the saucepan and stir for 1-2 minutes until the rice is lightly toasted.

    Add Broth Gradually

    Pour in the broth, one cup at a time, stirring continuously. Wait until most of the liquid is absorbed before adding more. This process should take about 20 minutes.

    Finish with Cheese

    Once the rice is creamy and al dente, stir in the grated Parmesan cheese, salt, and pepper. Keep warm.

Sauté the Sand Dabs

    Prepare the Dabs

    Season the sand dabs with salt and pepper. Dredge each filet in flour, then dip in beaten eggs, and finally coat with grated Parmesan cheese.

    Cook the Dabs

    In a large skillet, heat olive oil and butter over medium heat. Add the sand dabs and cook for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and keep warm.

Make the Lemon Butter Sauce

    Sauté Garlic

    In the same skillet used for the sand dabs, add 4 tablespoons of butter and minced garlic. Sauté until fragrant, about 1 minute.

    Add Lemon Juice

    Stir in lemon juice and chopped parsley, then remove from heat.

Prepare the Broccolini

    Sauté Broccolini

    In another skillet, heat 1 tablespoon of olive oil. Add the broccolini, season with salt and pepper, and sauté until tender, about 5-7 minutes.
