Preparation and Assembly

    Make the Potato Chips

    Preheat your oven to 400°F (200°C). Slice the potatoes into thin rounds. Toss them in olive oil, salt, and pepper. Spread them on a baking sheet in a single layer. Bake for 20-25 minutes or until golden and crispy, flipping halfway.

    Prepare the Chicken

    Grill the chicken breasts over medium heat until fully cooked (about 6-7 minutes per side). Once cooked, let it rest for a few minutes, then chop or shred into bite-sized pieces.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet, let cool, and then chop into small pieces.

    Assemble the Nachos

    On a large platter, layer the house-made potato chips. Top with grilled chicken, fontina cheese, crumbled Point Reyes blue cheese, and chopped bacon. Place under the broiler for 3-5 minutes until the cheese is melted.

    Remove from the oven and sprinkle with chopped green onions. Serve immediately with a side of sour cream.
