    Prepare the Spinach and Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove the bacon and drain on paper towels. In the same skillet, add the spinach and cook until wilted. Chop the bacon once cooled.

    Make the Parmesan Aioli

    In a bowl, combine the aioli, grated Parmesan cheese, minced garlic, lemon juice, and black pepper. Mix well and set aside.

    Prepare the Oysters

    Preheat the oven to 400°F (200°C). Place the oysters on a baking sheet, opening them carefully. Discard the top shell.

Assembly and Cooking

    Fill the Oysters

    In each oyster shell, place a layer of wilted spinach, followed by a sprinkle of crispy bacon. Top with a generous spoonful of the Parmesan aioli mixture.

    Bake the Oysters

    Drizzle Pernod over the filled oysters. Bake in the preheated oven for 10-12 minutes or until the tops are golden and bubbly.

    Serve

    Remove from the oven and let cool slightly before serving. Enjoy your Oysters Rock!
