Shrimp Preparation

    Season the Shrimp

    In a bowl, season the shrimp with salt and black pepper. Set aside.

    Prepare Breading Stations

    Set up three bowls: one with flour, one with beaten eggs, and one with a mixture of shredded coconut and chopped macadamia nuts.

    Coat the Shrimp

    Dredge each shrimp in flour, dip into the beaten eggs, and then coat with the coconut-macadamia mixture.

Frying

    Heat the Oil

    In a large skillet or deep fryer, heat vegetable oil over medium-high heat until shimmering.

    Fry the Shrimp

    Carefully place the coated shrimp in the hot oil, frying in batches to avoid overcrowding. Fry for 2-3 minutes per side, or until golden brown and crispy.

    Drain and Cool

    Remove the shrimp from the oil and place them on a paper towel-lined plate to drain excess oil.

Ponzu Sauce Preparation

    Mix the Sauce

    In a small bowl, combine soy sauce, rice vinegar, lime juice, and mirin. If desired, add bonito flakes for extra flavor.
