Method

Steak Preparation

    Cook the Steak

    Preheat the grill or skillet over medium-high heat. Season the steak with salt and black pepper. Cook for about 4-5 minutes per side for medium-rare or until desired doneness.

    Add the Crust

    In the last minute of cooking, top the steak with the blue cheese-truffle mixture and let it melt slightly.

Mashed Potatoes

    Boil Potatoes

    In a pot, boil the cubed potatoes in salted water until tender, about 15-20 minutes.

    Mash Potatoes

    Drain the potatoes, then mash them with butter, heavy cream, salt, and pepper until creamy.

Snap Peas

    Sauté Snap Peas

    In a skillet, melt butter over medium heat. Add snap peas and sauté for 3-4 minutes. Season with black pepper to taste.

Red Wine Demi Glace

    Make the Sauce

    In a saucepan, sauté minced shallot in butter until soft. Add red wine and beef broth. Bring to a boil and reduce to a simmer until sauce thickens, about 15-20 minutes. Stir in thyme.
