    Cook the Bacon

    In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

    Sauté Vegetables

    Add the butter to the pot with the bacon fat. Once melted, add the chopped onion and celery. Sauté until softened, about 5 minutes. Add garlic and cook for an additional minute.

    Add Potatoes and Seasonings

    Stir in the diced potatoes, dried thyme, bay leaf, and clam juice. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.

    Combine Clams and Cream

    Add the chopped clams and heavy cream to the pot. Stir to combine and cook for an additional 5 minutes, until heated through.

    Season and Serve

    Remove the bay leaf. Season with salt and black pepper to taste. Stir in the reserved bacon and chopped parsley before serving.
