Crab Cakes

Method

Preparation

1

Prepare the Grit Cakes

In a pot, bring water to a boil. Stir in grits and cook according to package instructions. Once thickened, add butter, cheese, salt, and pepper. Pour into a greased dish and allow to cool. Once set, cut into squares and fry until golden brown.

2

Make the Crab Cakes

In a bowl, mix crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, egg, bread crumbs, salt, and pepper. Form into patties and refrigerate for 30 minutes. In a skillet, heat oil and fry crab cakes until golden brown on both sides.

3

Grill the Asparagus

Toss asparagus with olive oil, salt, and pepper. Grill on medium-high heat for about 5-7 minutes, until tender and slightly charred.

4

Prepare the House Sauce

In a bowl, combine mayonnaise, lemon juice, Dijon mustard, garlic powder, and salt. Mix well and adjust seasoning as needed.

5

Assemble the Dish

Serve each crab cake on top of a grit cake, accompanied by grilled asparagus and a side of house sauce.
