    In a skillet over medium heat, add the bacon strips and cook until crispy, about 5-7 minutes. Once cooked, remove from the skillet and let cool on a paper towel. Chop into small pieces.

    In the same skillet, add the breakfast sausage links. Cook until browned and fully cooked through, about 6-8 minutes. Remove from the skillet, let cool slightly, and slice into small pieces.

    Prepare the Eggs

    In a bowl, crack the eggs and whisk until well combined. Season with salt and pepper to taste.

    Cook the Eggs

    In the skillet with the residual grease from the bacon and sausage, pour in the whisked eggs. Add the diced green bell pepper and cook over medium-low heat, gently stirring, until the eggs are scrambled and cooked through, about 3-4 minutes. Stir in the chopped bacon and sausage, then add the shredded cheddar cheese. Stir until the cheese is melted.

    Warm the Tortillas

    While the eggs are cooking, warm the tomato tortillas in a separate skillet over low heat for about 1-2 minutes on each side until pliable.

    While the eggs and tortillas are cooking, prepare the frozen potato rounds according to package instructions, usually baking them in the oven for about 20-25 minutes until crispy.

    Assemble the Wraps

    Take a warm tomato tortilla and spoon a generous portion of the scrambled egg mixture onto the center. Fold the sides of the tortilla over the filling and then roll it up from the bottom to create a wrap.
