Pretzel Roll Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Mix the Dough

    In a large mixing bowl, combine the flour and salt. Make a well in the center and add the melted butter and yeast mixture. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour, or until doubled in size.

    Shape the Rolls

    Once risen, punch down the dough and divide it into 12 equal pieces. Shape each piece into a roll and place them on a parchment-lined baking sheet.

    Second Rise

    Cover the shaped rolls with a cloth and let them rise for another 30 minutes.

    Prepare Baking Soda Bath

    Preheat the oven to 425°F (220°C). In a large pot, bring 10 cups of water to a boil and add the baking soda.

    Boil the Rolls

    Carefully drop the rolls into the boiling water, 2-3 at a time, and boil for 30 seconds on each side. Remove with a slotted spoon and place back on the baking sheet.

    Add Topping

    Sprinkle coarse salt on top of each roll.

    Bake

    Bake in the preheated oven for 12-15 minutes, or until golden brown.

Cheese Sauce Preparation

    Make Roux

    In a saucepan over medium heat, melt the butter. Add the flour and whisk continuously for about 1 minute to form a roux.

    Add Milk

    Gradually add the milk, whisking constantly to avoid lumps. Cook until the mixture thickens, about 3-5 minutes.

    Add Cheese and Seasoning

    Remove from heat and stir in the shredded cheddar cheese, salt, and pepper until smooth.
