Method
Prepare the Fries
- 1
Cut the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch wide.
- 2
Soak the Fries
Place the cut fries in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.
- 3
Dry the Fries
After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.
- 4
Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).
- 5
Fry the Potatoes
Carefully add the dried fries to the hot oil in batches. Fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Sprinkle with salt while hot.
Make the Parmesan-Garlic Sauce
- 6
Melt the Butter
In a saucepan over medium heat, melt the unsalted butter.
- 7
- 8
Add Cream and Parmesan
Pour in the heavy cream and stir well. Allow it to simmer for 2-3 minutes, then gradually mix in the grated Parmesan cheese until melted and smooth.
- 9
Season the Sauce
Add black pepper and chopped parsley, stirring to combine. Remove from heat and set aside.
Serve the Dish
- 10
Plate the Fries
Place the crispy fries on a serving platter.
- 11
Top with Sauce
Drizzle the Parmesan-garlic sauce generously over the fries.
- 12
Garnish
If desired, sprinkle additional grated Parmesan cheese and chopped parsley over the top.
- 13
Serve with Ranch
Serve the Parmesan fries hot with a side of ranch dressing for dipping.
